Breakfast Egg & Greens Tortilla

I love to start my mornings off with a healthy, protein-focused breakfast; something that will keep me feeling full & energized without any heavy sluggishness. Below I’ve included one of my favorite, go-to, recipes. 

Breakfast Egg & Greens Tortilla

Ingredients:

1 Flour Tortilla

2 Tbsp. Guacamole 

2 Tbsp. Everything Bagel Seasoning

2-3 CBF Free-Range Eggs (6g protein/egg)

1/4 c. Micro-Greens 

(I prefer the Detox Green Blend from Loving Mama Farm)

Olive Oil

 

First, I heat up a skillet, lightly spray with oil and fry the eggs sunny-side up. In the meantime, I spread guacamole on a tortilla and sprinkle with half the bagel seasoning. Once the eggs are cooked, I place them on top of the guacamole and sprinkle the top with the remaining bagel seasoning & micro-greens. Lastly, I place the whole tortilla back on the hot skillet for a nice golden bottom. (You can also wait to add the greens/seasoning after this step).

Enjoy for a breakfast packed with protein and nutrients. Micro-greens are extremely beneficial for vitamins & minerals, as well as other health benefits such as improved digestion (fiber), cardiovascular health (antioxidants linked to lowering blood pressure), cancer prevention (especially micro-greens containing phytochemicals such as broccoli), and more! Not to mention, this breakfast is fast and simple to make.
